  • Nose Dark and syrupy. It opens with grilled honeycomb, treacle tart, and butterscotch. As it sits, the Chinquapin wood emerges with notes of aniseed, liquorice, and candied orchard fruits, balanced by a dusting of dark cocoa.
  • Palate Intense and chewy. Initial flavors of ginger and cinnamon spice are smoothed over by fig jam, blackberries, and molasses. There’s a notable candied lemon brightness that cuts through the heavier wood tannins.

Under the ownership of Billy Walker since 2017, The GlenAllachie has transformed from a blending-workhorse distillery into a "cask-management" powerhouse. Walker’s 50+ year career is defined by his obsession with wood, and the Sinteis series is his latest playground. While the core range focuses on classic sherry maturation, Sinteis allows him to push the boundaries of Virgin Oak, a notoriously difficult wood to master because it can easily overpower a delicate spirit. By balancing the spicy, tannic "fire" of Chinquapin with the syrupy, dark "velvet" of Pedro Ximénez, the distillery aims to create a more approachable version of virgin-oak whisky.
