About the product

The GlenAllachie 2012 Single Cask is a limited cask strength release that showcases the distillery’s focus on cask-driven character and small-batch craftsmanship. Drawn from a single carefully selected cask, it offers a unique and unrepeatable expression of Speyside single malt.

On the palate, it delivers a rich and layered profile with notes of honey, caramel, and vanilla, complemented by dried fruit, orange zest, and warming spice. Depending on the cask type, additional hints of chocolate, toasted oak, and subtle nuttiness add depth and complexity.

The texture is full-bodied and robust, carrying its natural cask strength with balance. The finish is long and warming, with lingering sweetness, spice, and oak.

Distinctive and characterful, this single cask release is ideal for enthusiasts seeking a bold and authentic Speyside whisky with individuality and depth.

Tasting Profile & Food Pairings

Taste Notes (Typical for 2012 Sherry Casks)

While each cask varies, the 2012 Sherry-matured releases are known for their "Big and Bold" Speyside character:

  • Nose: Explosive notes of heather honey, dark chocolate, and mocha, followed by waves of ginger, glazed cherries, and cinnamon.
  • Palate: Rich and viscous. Expect rich treacle (molasses), damson plums, and sticky toffee pudding, balanced by a spicy zest of orange peel.
  • Finish: Long and warming with a dry, nutty oak finish and lingering notes of dark fruit jam and nutmeg.

Food Pairings

Because this is a high-proof, sherry-forward whisky, you need foods with deep, earthy flavors or high fat content to balance the intensity.

  • Savory: Venison Stew or Roast Lamb. The gamey richness of the meat stands up to the heavy sherry tannins, while the whisky’s sweetness complements the savory juices.
  • Cheese: Aged Stilton or Roquefort. The saltiness and "funk" of a blue cheese create a classic sweet-and-salty contrast with the dark fruit and honey in the whisky.
  • Sweet: Dark Chocolate & Sea Salt Tart. The high cacao content highlights the mocha and espresso notes in the finish, while the salt tames the high alcohol heat.

About the brand

The Billy Walker Era: The distillery’s trajectory changed in 2017 when it was purchased by a consortium led by legendary Master Distiller Billy Walker (formerly of Glendronach). Walker is famous for his "wood management"—spending millions on the highest-quality sherry casks in the world.

The "Single Cask" Program: Every year, Walker hand-selects a small number of barrels that show exceptional character to be bottled as Single Casks. These represent the absolute pinnacle of what the distillery produces.

Philosophy: They focus on "integrity bottling"—always natural color, non-chill filtered, and usually at a powerful cask strength.
