About the product

The GlenAllachie 35 Year Old is an ultra-aged Speyside single malt that represents decades of careful maturation and expert cask selection. Produced in limited quantities, it showcases exceptional depth, balance, and refinement developed over 35 years in oak.

On the palate, it reveals a luxurious profile of dried fruit, fig, and raisin, complemented by notes of honey, caramel, and dark chocolate. Layers of orange peel, warm spice, and toasted oak add complexity, while subtle hints of coffee and nuttiness enhance the richness.

The texture is velvety and full-bodied, delivering remarkable smoothness and integration. The finish is long and elegant, with lingering sweetness, spice, and mature oak.

Rare and sophisticated, this 35-year-old expression is designed for slow appreciation, offering a deeply complex and refined Speyside whisky experience.

Tasting Profile & Food Pairings

Taste Notes

The Mizunara influence adds a unique "incense" and tropical layer to the heavy, dark-fruit Speyside spirit.

  • Nose: Rich and sophisticated. Leading with mocha, crystallized cinnamon, and treacle tart, followed by toasted hazelnuts, grilled pineapple, ginger, and heather honey.
  • Palate: Intensely layered. Expect cocoa, baking spices, and chocolate-coated raisins, which transition into creamy coconut, brandied orchard fruits (peaches/pears), and sandalwood.
  • Finish: Long and evolving. It leaves a delicate trail of vanilla, dried red fruits, honeycomb, and a subtle fragrance reminiscent of Japanese incense.

Food Pairings

For a whisky of this age and price point (approx. $2,000+), pairings should be luxurious and focus on "umami" and deep sweetness.

  • Savory: Miso-Glazed Roasted Duck. The savory miso and fatty duck skin are the perfect bridge to the sandalwood and pineapple notes provided by the Mizunara oak.
  • Cheese: Extra-Aged Mimolette or Old Amsterdam. These cheeses have "crunchy" salt crystals and a deep nuttiness that harmonizes with the mocha and toasted hazelnut on the palate.
  • Sweet: Dark Chocolate Ganache Tart with Gold Leaf. High-quality cacao brings out the espresso and cocoa notes, while a touch of sea salt will make the tropical fruit flavors pop.
  • Luxury: A Fine Japanese Cigar. The sandalwood and incense characteristics of the whisky are famously enhanced by the smoke of a high-end, light-to-medium-bodied cigar.

About the brand

The Billy Walker Touch: Since taking over in 2017, Billy Walker has transformed GlenAllachie from a "blending workhorse" into a world-class single malt powerhouse. This 35-year-old is his "magnum opus," combining the heavy sherry influence he is famous for with the exotic, difficult-to-tame Mizunara wood.

The Packaging: The bottle is housed in a bespoke Valchromat box inspired by Kumiko (traditional Japanese woodworking). The design features motifs representing the four cask types and stone textures that pay homage to the distillery's name, which means "Valley of the Rocks."
