Tasting Profile & Food Pairings
Taste Notes (PX/Oloroso Styles)
- Nose: Deep and mahogany. Intense waves of heather honey, mocha, and dried sultanas, followed by pineapple and eucalyptus.
- Palate: Thick and "syrupy." Lashings of dark chocolate, damson plums, and orange zest, fusing with treacle, cinnamon, and nutmeg.
- Finish: Incredibly long and drying, with almond paste, toasted oak, and baking spices.
Food Pairings & Serving
- Savory Pairing: Pairs perfectly with Venison with a Red Wine Reduction or Braised Beef Short Ribs. The spirit’s heavy sherry influence mirrors the dark fruit notes of the sauces.
- Cheese Pairing: Match with a Roquefort or Stilton. The salty, pungent blue cheese is the classic foil for the "Christmas cake" sweetness of a vintage GlenAllachie.
- Sweet Pairing: Ideal with Dark Chocolate Ginger or a Rich Fruit Cake.
- The "Legacy" Serve: This is a meditation dram. Serve it neat in a tulip glass and allow it to sit for at least 15 minutes. Because of its age, the spirit needs time to "breathe" and shed its initial wood-heavy tightness.
About the brand
The GlenAllachie (Gaelic for "Valley of the Rocks") was largely a "workhorse" distillery for blends until 2017, when legendary Master Distiller Billy Walker took the helm. Since then, the distillery has become a global powerhouse for single malt enthusiasts, particularly for those who love intense sherry maturation. The 1989 Vintage represents some of the oldest and most prestigious stock in their warehouses, having been distilled under previous ownership and "rescued" by Walker to be finished in his signature selection of premium casks.
