Taste & Sensory Profile

• Nose: A beautiful balance of "fresh and toasted." You’ll smell cooked agave and vanilla, with distinct fruity notes of raisins, dried apricots, and a faint hint of citrus peel.
• Palate: Silky and sweet. The oak influence is clear but not overpowering, offering flavors of honey, butterscotch, and cinnamon. Unlike the Extra Añejo, you can still find the "Highland signature"—a refreshing pop of melon and herbal agave in the mid-palate.
• Finish: Clean and warming. It leaves a soft trail of caramel, smoky oak, and a tiny pinch of white pepper.

Food Pairings

• Savory: Tacos al Pastor or Grilled Pork Chops. The pineapple and spice in Al Pastor tacos perfectly match the caramel and fruit notes of an Añejo.
• Cheese: Aged Manchego. The nuttiness of the cheese brings out the honeyed, toasted notes of the tequila.
• Sweet: Vanilla Flan or Apple Galette. The vanilla and cooked fruit in these desserts create a "flavor bridge" with the barrel-aged characteristics of the spirit.
• The "Purist" Serve: Serve this in a copita or a small wine glass at room temperature. While it stands up well to a single large ice cube, drinking it neat is the best way to catch the delicate melon and floral notes that are often lost in older tequilas.
