Tasting Profile & Food Pairings

Taste Notes

Cordon Bleu is a "connoisseur's cognac," prized for its complexity and the high proportion of rare Borderies eaux-de-vie.

  • Appearance: Deep, golden copper with shimmering highlights.
  • Aroma: Vibrant and rich. You’ll find candied plum, apple, and apricot harmonizing with roasted notes of mocha coffee, toasted almonds, and vetiver.
  • Palate: Exceptionally mellow and rounded. It features flavors of honey and gingerbread, balanced by dried fruits and a delicate floral lift.
  • Finish: Impressively long and satiny, characterized by lingering notes of fruit and warming spices like cinnamon and clove.

Food Pairings

Because of its rich, fruity intensity and spicy undertones, this cognac is a versatile partner for bold flavors:

  • Seafood: It is a classic match for crustaceans (lobster, crayfish, or scallops), as the cognac’s richness brings out the natural sweetness of the shellfish.
  • Main Courses: Roasted poultry, veal, or duck with a fruit-based reduction (like orange or plum).
  • The "Celebration" Pairing: Dark chocolate desserts with orange peel or a traditional Tarte Tatin.
  • Cheese: Extra-old Mimolette or a mature Comté with dried fruit chutney.
  • Cigar: Its spicy, robust profile makes it an excellent companion for a medium-to-full-bodied cigar.

About the brand

Founded in 1715 by Jean Martell, Maison Martell is the oldest of the "Big Four" Cognac houses. Martell is defined by its use of the Borderies cru, the smallest and most sought-after growth area in the region, which lends their spirits a distinct floral elegance. The 2026 edition features a collaboration with Chinese contemporary artist He Datian. The design is deeply symbolic: in modern Chinese, the first character of Martell—Ma (马)—literally means "horse." He Datian’s calligraphy depicts a horse changing direction at high speed, symbolizing a "trajectory toward success" for the new year.
