Tasting Profile & Food Pairings

Tasting Notes

  • Nose: Aromatic and bright. You'll find fresh agave and minerals layered with honey, dried fruits (dates/figs), and a delicate floral bouquet.
  • Palate: Dense and sophisticated. The "Yamazaki DNA" appears as toasted almonds, pecans, and raw honey. Mid-palate, you get a beautiful balance of warm spices (cinnamon) and sherry notes, followed by toasted coffee beans and dark chocolate.
  • Finish: Long and lingering. It leaves a trail of seasoned oak, red berries, and black pepper, with a final hint of clove.

Food Pairings

  • Savory: Duck Breast with a Cherry-Balsamic Reduction. The red berry and sherry notes in the tequila are a perfect bridge for the rich, fatty duck and fruit sauce.
  • Cheese: 18-Month Aged Comté. The nutty, buttery profile of this French cheese harmonizes with the toasted almond and honey notes of the finish.
  • Sweet: Japanese Dark Chocolate or Matcha Truffles. The bitterness of high-quality cacao highlights the coffee bean and dark chocolate notes on the palate.
  • The "Fusion" Pairing: Wagyu Tataki with a splash of Ponzu. The minerality of the agave cuts through the Wagyu fat, while the citrusy ponzu highlights the tequila's hidden floral notes.
