Preservation Distillery Estate Bourbon Whiskey is a small-batch Kentucky bourbon crafted using traditional copper pot stills on a working farm distillery in Bardstown. This hands-on, slower distillation method produces a richer and more full-bodied spirit compared to modern column still bourbons.

On the palate, it delivers layered notes of caramel, vanilla, and toasted oak, complemented by hints of toffee, baking spice, and light nuttiness. The profile is bold yet balanced, with depth coming from both the grain and the distillation process.

Taste Notes

This is a "Wheated Bourbon" but not as you know it. Unlike the light, floral style of a Weller, Preservation's pot-still method creates a dense, "chewy" profile.

  • Nose Deep and atmospheric. It opens with burnt caramel, espresso beans, and dark cherries, followed by a distinct "old warehouse" scent of barn wood, leather, and sorghum.
  • Palate Bold and syrupy. You will find flavors of toffee and dark chocolate fudge, balanced by toasted wheat bread and clover honey. The dark-toasted malted barley provides a savory, roasted-nut depth.
  • Finish Long and warming. It leaves a lingering trail of hot cinnamon candy and wintergreen, with a final aromatic note of charred oak and orange oil.

The bold, high-proof nature of this wheated bourbon makes it a "chameleon" for both savory meats and rich, fatty cheeses.

About the brand

Preservation Distillery is a 40-acre historic tobacco farm turned "boutique" distillery, founded by Marci Palatella—a legendary figure in the bourbon world known for her "Very Olde St. Nick" and "Rare Perfection" labels. While the distillery initially made its name by bottling some of the most sought-after vintage "honey barrels" in Kentucky, their ultimate goal was to revive the "old-school" depth of flavor that disappeared with industrial column stills. As the only 100% pot-distilled producer in Nelson County, they focus on a slow, sustainable process that mimics the pre-Prohibition style of whiskey making. Their estate releases are notoriously hard to find, as they refuse to rush the maturation process, letting each barrel rest until it hits its "sweet spot" at 6+ years.
