Tasting Profile & Food Pairings

Taste Notes (General Profile)

  • Nose: Usually intense due to the high proof, featuring the base bourbon's caramel and vanilla fighting for attention with the specific finish (e.g., honey, fruit, or wood spice).
  • Palate: Bold and oily. Nulu is known for a "thick" mouthfeel. You will taste the high-rye spice of the base bourbon followed by a heavy influence from the finishing cask.
  • Finish: Long, warming, and usually dominated by the "experimental" element (like a lingering cinnamon or honey sweetness).

Serving Suggestion

  • The "Neat" Sip: Because these are often high-proof "flavor bombs," they are best enjoyed neat. However, adding a few drops of water is almost always recommended to help peel back the layers of the secondary finish.

About the brand

Nulu is the signature brand of Prohibition Craft Spirits (PCS), a family-owned distillery located in the heart of the "NuLu" (New Louisville) district in Louisville, Kentucky. The brand has gained a massive following for its transparency and high-quality sourcing. While they do distill their own spirits, they are most famous for hand-selecting and finishing barrels of aged whiskey—specifically sourcing high-rye bourbon from MGP in Indiana—to create unique, small-batch expressions.
