The Dead Sea maturation creates a "salty-sweet" profile that is entirely unique to this expression.

  • Nose: Intense and spicy. It opens with burnt sugar, cigar box, and heavy oak, followed by sweet waves of dark chocolate, espresso, and caramelized pineapple.
  • Palate: Powerful and mouth-coating. You will find black strap molasses and roasted coffee, transitioning into a mid-palate of black pepper, sea salt, and leather. There is a distinct "mineral" quality that runs through the spirit.
  • Finish: Exceptionally long and drying. It leaves a lingering trail of cinnamon, ginger, and damp earth, with a final savory saltiness that stays on the tongue.

The "volcanic" intensity and salt-forward profile of the APEX Dead Sea make it a bold partner for charred meats and rich, dark treats.

  • Savory: Smoked Brisket with a Coffee Rub. The espresso and molasses notes in the whisky are a direct mirror to the savory bark of the brisket.

About the brand

Founded in 2013, Milk and Honey is Israel’s first single malt distillery. Under the early guidance of the late legendary consultant Dr. Jim Swan, the distillery embraced the "Hot Climate Maturation" philosophy. The APEX series is their pinnacle line, designed to push the boundaries of fermentation and aging environments. Because the angel’s share (evaporation) at the Dead Sea can reach a staggering 25 percent per year, the whisky interacts with the wood at a frantic pace. This results in a spirit that possesses the deep color and concentrated wood sugars of a 20-year-old Scotch in just a fraction of the time. In 2023, M&H was named "World's Best Single Malt" at the World Whiskies Awards, cementing its place as a global powerhouse.
