Tasting Profile & Food Pairings

1. Mirror Brook (Bottled-in-Bond)

  • Taste Notes: A blend of Kentucky Straight whiskeys. It features a ripe cherry nose with a waft of oak. The palate is creamy with vanilla, leading to waves of chocolate and a light rye spice.
  • Food Pairings: Duck Confit or cherry-glazed pork. The dark fruit notes in the whiskey complement rich, gamey meats.

2. Very Oldest Procurable (V.O.P.)

  • Taste Notes: Uncut and unfiltered. Extremely bold and complex with stewed cherries, dark unsweetened chocolate, and a heavy punch of rye spice that mellows into a long honey and molasses finish.

About the brand

As the oldest continuously operating distillery in America, Buffalo Trace was one of only six distilleries granted a federal license to bottle whiskey for "medicinal purposes" between 1920 and 1933. This collection uses archival research to revive forgotten brands from that era, using the same yeast strain the distillery has maintained since the 1930s.
