About the product

Caballito Cerrero Blanco "Chato" is a premium Mexican mezcal crafted from wild agave plants harvested in the rugged highlands. This artisanal spirit delivers a bold, smoky character with subtle floral and mineral notes that reflect its terroir. The traditional production method—roasting agave in underground pits and distilling in small batches—creates a complex, authentic flavor profile perfect for sipping neat or in craft cocktails. Ideal for mezcal enthusiasts seeking genuine, small-batch quality.

Tasting Profile & Food Pairings

Taste Notes

  • Nose: Highly aromatic and "wild." You’ll find roasted green apples, damp earth, and black bean dip, followed by a distinct lactic funk (like fresh cream or yogurt).
  • Palate: A massive "agave bomb." It is savory and sweet simultaneously, featuring cooked agave, green bell pepper, anise, and salted caramel.
  • Finish: Long and mineral-heavy with a spicy kick of cinnamon and white pepper.

Food Pairings

Because of its high proof and savory "funk," this spirit pairs excellently with complex, textured dishes:

  • Savory: Carnitas with Salsa Verde. The fat of the pork is sliced through by the 46% ABV, while the acidity of the tomatillo salsa highlights the spirit’s vegetal notes.
  • Seafood: Grilled Pulpo (Octopus) with Paprika. The smoky char of the octopus matches the earthy, roasted qualities of the Chato agave.
  • Adventurous: Blue Cheese. Surprisingly, the lactic, funky notes in the spirit harmonize beautifully with a pungent blue cheese or a sharp Roquefort.

About the brand

Caballito Cerrero was founded in 1950 by Don Alfonso Jiménez Rosales, a member of the family that originally founded Tequila Herradura. The name—which means "The Untamed Horse"—is a defiant nod to the family's history: the label says it is the horse that "doesn't need horseshoes" (herraduras). In 2018, the brand famously chose to leave the Tequila Regulatory Council (CRT) to protest industrialization, allowing them to continue using traditional agave varieties like Chato.
