Tasting Profile & Food Pairings

Taste Notes

This set includes three distinct 50ml expressions:

  • Extra Years: Rich sweetness with deep notes of almond and marzipan, balanced by a vibrant, natural acidity.
  • Extra Shiso: Infused with red shiso leaves, adding a pleasantly bitter, herbaceous character and a soft pink hue.
  • Royal Honey: Made with natural honey and royal jelly instead of sugar, offering a mild sweetness and a silky floral finish.

Food Pairings

  • Savory: Spicy Tuna Rolls or Pork Gyoza. The Umeshu’s high acidity and sweetness cut through the heat of spicy mayo and the fattiness of pork.
  • Cheese: Blue Cheese or Aged Gruyère. The tartness of the plum creates a "chutney-like" effect that stands up to the funk of blue cheese.
  • Sweet: Vanilla Bean Panna Cotta or Almond Tuiles. The marzipan notes in the "Extra Years" and "Royal Honey" mirror the flavors of almond-based desserts.

About the brand

CHOYA is the world’s leading producer of Umeshu, a traditional Japanese liqueur made from ume plums. Founded in 1924 in Osaka by Sumitaro Kondo, the company spent decades refining the "Lincoln County Process" of Umeshu—aging the whole fruit with the stone inside to extract deep flavors from the flesh, skin, and pit. This specific Extra Series represents the pinnacle of their craft, using 100% premium Nanko-ume from the famous Kishu region.
