About the product

A distinguished Cabernet Sauvignon from the 2016 vintage, this wine showcases the depth and complexity that estate-grown fruit delivers. Rich dark fruit flavors blend seamlessly with structured tannins, creating a wine with excellent aging potential. The careful balance of power and elegance makes it an ideal choice for special occasions or as a centerpiece to a refined dinner. Best enjoyed with hearty dishes, premium cuts of meat, or simply appreciated on its own.

Tasting Profile & Food Pairings

Taste Notes

  • Nose: An explosive and layered bouquet featuring lilacs, violets, and vanilla, underpinned by complex notes of espresso roast, truffles, and cinnamon stick. It transitions into deep fruit aromas of blueberry compote and blackcurrant.
  • Palate: Massive yet incredibly polished. The palate is savory and "pixelated," delivering intense flavors of black fruit preserves, licorice, and cigar box. Despite its power, it maintains a fantastic juiciness and a supple, well-integrated tannin structure.
  • Finish: Exceptionally long and lifted, characterized by a persistent spiciness and lingering notes of dark chocolate and crème de cassis.

Food Pairings

This muscular, high-phenolic Cabernet Sauvignon requires rich, well-marbled dishes to balance its structure:

  • Main Course: Grilled Ribeye Steak topped with melted blue cheese and shallots, or a Braised Wagyu Short Rib with a blackberry reduction.
  • Game: Roasted Rack of Lamb with rosemary and a garlic crust.
  • Cheese: Sharp, aged cheeses like 36-month Aged Gouda or a pungent Roquefort that can stand up to the wine's intensity.
  • The Collector's Note: For the best experience in 2026, it is recommended to decant the wine for at least 4 hours before serving to allow its complex aromatic layers to fully unfold.

About the brand

Patrimony Estate is the prestige project of brothers Georges and Daniel Daou, who also founded the widely acclaimed DAOU Vineyards. The brand was established with the ambitious goal of producing a "California First Growth"—a wine that can compete directly with the world's most iconic Bordeaux estates. Patrimony focuses on the "intentional omission" of everything but the absolute highest-quality fruit from specific micro-parceled rows. The winemaking process is rigorous, utilizing wild yeasts, 100% new French oak aging for 30 months, and specialized "bois rosé" barrels to achieve an extraordinary level of phenolic concentration and elegance.
