Tasting Profile & Food Pairings
Taste Notes
Despite its youthful age, the "Tel Aviv sun" gives it a remarkably rich and weighted profile.
- Nose: Dominant red fruit aromas (cherries and strawberries) mixed with sweet malt, marshmallows, and a hint of lemon freshness. You may also catch a faint note of tobacco leaf.
- Palate: Medium-bodied and creamy. It opens with dark chocolate and golden syrup, followed by the classic sherry influence of raisins, sultanas, and dried plums.
- Finish: Long and satisfying. It leaves a lingering trail of oak tannins, baking chocolate, and a touch of anise.
Food Pairings
The "jammy" sherry notes and creamy texture make this whisky a fantastic companion for both savory-sweet and rich dessert courses.
- Savory: Lamb Tagine with Prunes. The dried fruit and warm Moroccan spices in the dish are a perfect mirror for the PX sherry influence in the whisky.
- Cheese: Aged Gouda or Manchego. The saltiness and nuttiness of these cheeses create a beautiful contrast with the whisky's honeyed sweetness.
- Sweet: Chocolate Lava Cake. The molten center of a dark chocolate cake pulls out the cocoa and red berry notes of the dram.
- Holiday Classic: Pomegranate-Glazed Roasted Chicken. A nod to Israeli flavors, the tartness of the glaze balances the rich, syrupy mouthfeel of the Sherry Cask.
About the brand
The Pioneer: Founded in 2013, Milk & Honey is Israel’s first single malt distillery. They worked closely with the late legendary consultant Dr. Jim Swan (the "Einstein of Whisky") to perfect their maturation process for hot climates.
The Kosher Milestone: Sherry casks are notoriously difficult for Kosher certification because the wine previously held in the barrels must be handled according to Jewish dietary laws. M&H commissioned their own casks in Spain, supervising the entire sherry-making process to ensure the barrels met these standards.
The "Elements" Series: This core range explores different cask influences (Sherry, Red Wine, and Peated) to showcase the versatility of their Mediterranean-matured spirit.
