Following cooking, the agave is pressed to extract the mosto, which then undergoes a meticulous fermentation process. The liquid is distilled multiple times, typically in copper pot stills, to achieve exceptional purity and refinement before it begins its extensive aging journey. For an Extra Añejo designation, the tequila must be aged for a minimum of three years. Rey Sol, however, pushes this well beyond the minimum, often aging for five to seven years, or even longer, in small American oak barrels.
