Tasting Profile & Food Pairings

Taste Notes

  • Nose: Delicate and sweet. Fresh cooked agave mingles with soft vanilla, pear, and a touch of white pepper.
  • Palate: Silky and light-bodied. It features refreshing lemon-lime citrus, honey, and a distinct buttery mouthfeel.
  • Finish: Exceptionally clean and fresh, with lingering notes of toasted oak and fruit.

Food Pairings

  • Savory: Masa-Crusted Rockfish or Ceviche. The triple-distillation makes this spirit lighter and more "citrus-forward," which highlights the acidity in seafood.
  • Cheese: Mild Goat Cheese or Fresh Mozzarella. These soft cheeses don't overpower the delicate floral and honey notes of the tequila.
  • Sweet: Key Lime Pie or Mango Sorbet. The citrus and cooked pear notes in the glass perfectly complement tropical fruit desserts.

About the brand

Corralejo is one of Mexico’s most historic tequila producers, established in 1775 at the Hacienda Corralejo in Guanajuato. Notably, it was the birthplace of Miguel Hidalgo, the "Father of Mexican Independence." Corralejo is unique for using the Charentais method—the same triple-distillation process used for French Cognac. This method involves a combination of copper pot stills and column stills to achieve a level of purity and "softness" that is rare in the tequila world.
