About the product
Discover this exceptional limited-edition mezcal from Caballito Cerrero, crafted from rare, estate-grown Agave Chato. This still-strength expression bottled at 110 proof represents a singular batch yielding just 180 liters. Produced by the 14th and 15th generation of a family mezcalero dynasty spanning since the 16th century, each bottle honors generations of authentic "vino mezcal" tradition and uncompromising craftsmanship.
Tasting Profile & Food Pairings
Taste & Sensory Profile
- Nose: An explosive and "wild" bouquet. You are hit immediately with sweet cooked agave and tropical fruits (pineapple and papaya), followed by earthy notes of wet clay, brine, and fresh mint.
- Palate: Massive and oily. Despite the 110 proof, it is surprisingly approachable. Expect flavors of bubblegum, green pepper, and honey, evolving into cinnamon, anise, and a distinct floral perfume. It is "funky" in the best way possible, reminiscent of a high-end mezcal but without the smoke.
- Finish: Long, vibrating, and clean. It leaves a powerful tingle of black pepper and sweet cooked yams, with a mineral saltiness that makes you want another sip.
Food Pairings
Because of its high proof and intense agave flavor, this spirit needs food that can stand up to its "punch":
- Savory: Cochinita Pibil (Slow-roasted pork). The acidity and spices of the pork match the "Unicorn's" vibrant fruit and pepper notes.
- Seafood: Grilled Octopus with Paprika. The charred, meaty texture of the octopus is a great foil for the high-alcohol "heat" and mineral finish.
- Cheese: Strong, funky Goat Cheese. The earthy, tangy profile of goat cheese complements the "wild" fermentation notes of the spirit.
- The "Purist" Serve: Neat. Do not hide this in a cocktail. If the 110 proof is too intense, add exactly three drops of room-temperature water to "open" the floral aromatics.
About the brand
Founded in 1950 by Don Alfonso Jiménez Rosales (who co-founded Tequila Herradura), the brand’s name means "The Untamed Horse—the one who does not need horseshoes." This is a literal jab at Herradura (Spanish for horseshoe). The family has been distilling for 15 generations at the Santa Rita Factory in Amatitán, which shares space with some of the oldest archaeological distilling sites in North America. They are the "rebels" of the industry, prioritizing heritage over legal labels.Recommended products
