Tasting Profile & Food Pairings
Taste Notes (2023/2024 Vintages)
The winery explicitly avoids the "buttery popcorn" style, aiming instead for "racy freshness."
- Appearance: Bright straw yellow.
- Aroma: Inviting scents of Meyer lemon, mandarin orange zest, and crisp green apple, with a warm hint of honey and vanilla bean.
- Palate: Medium-bodied with a beautiful balance. You’ll taste white peach and guava layered with a "flinty" or "wet stone" minerality. It has a creamy texture from weekly battonage (stirring of the lees) but maintains sharp, refreshing acidity.
- Finish: Long and clean, ending on notes of toasted graham cracker and citrus peel.
Food Pairings
This wine’s high acidity and moderate oak make it a fantastic partner for a wide range of foods:
- Seafood: Fresh fish tacos, grilled scallops, or Dungeness crab with drawn butter.
- Poultry: Chicken Piccata (the lemon in the dish mirrors the wine) or roasted turkey.
- Vegetarian: Roasted seasonal squash, corn chowder, or spring salads with citrus vinaigrette.
- Cheese: Mild Cheddar, Brie, or Havarti.
- The "Vibe" Pairing: The winery suggests pairing it with a "Sunday Brunch" or a "Summer evening al fresco."
