Tasting Profile & Food Pairings

Taste Notes

  • Nose: Incredibly complex and "brown-toned." It opens with anise, licorice, and fresh almond, followed by lush layers of dried fig, roasted mocha, and tobacco.
  • Palate: A masterclass in texture. It is full-bodied and satiny, beginning with "fat" fruit notes like ripe mango that transform into an airy, delicate mousse.
  • Finish: Exceptionally long and lively. Expect a lingering trail of candied grapefruit and white pepper with a distinctive toasted, sappy character.
  • Food Pairing: While it can elevate any dish, its complexity thrives alongside Black Truffle Risotto or Seared Scallops with a Beurre Blanc sauce. For a traditional Easter match, try it with Slow-Roasted Veal or a Moroccan-spiced Lamb Tagine—the wine’s licorice and spice notes will harmonize beautifully.
  • Serving: Serve at 10°C–12°C. Do not over-chill, as extreme cold will mute the delicate third-plénitude secondary aromas like mocha and dried figs.

About the brand

Dom Pérignon is the prestige cuvée of Moët & Chandon, named after the monk who pioneered many of the techniques used in Champagne production today. The Plénitude concept refers to the three distinct "lives" of a vintage as it matures on its lees. While the standard vintage (P1) is released after ~8 years and P2 after ~15, P3 represents the "Third Plénitude"—the ultimate expression of a vintage, released only after 25 to 30+ years of careful maturation in the cellars. The 1992 P3 is a rare treasure, representing a year that required immense patience and technical skill to navigate spring frosts and a hot summer.
