Tasting Profile & Food Pairings
Taste Notes
- Nose: A heavy, rich aroma of Concord grapes, maple sugar, and citrus zest, layered over deep oak char and allspice.
- Palate: Bold and "hot" but velvety. It features rich caramel, honey, and vanilla, which quickly evolve into more complex notes of tobacco leaf, dark chocolate-covered almonds, and raisin bread.
- Finish: Long, dry, and savory. It leaves a lingering impression of leather, black pepper, and cinnamon, with a faint herbal "vermouth" lift.
Food Pairings & Serving
- The "Collector" Serve: Because of its age and high proof, this should be enjoyed neat in a tulip-shaped glass. A few drops of water can help "open" the vermouth fruitiness if the 114-proof heat feels too intense.
- Savory Pairing: Pairs brilliantly with Roasted Bone Marrow or Duck Confit. The high age statement and tannins act as a perfect foil for rich, fatty meats.
- Cheese Pairing: Match with an Extra-Aged Mimolette or Blue Stilton. The salty, sharp cheese highlights the honeyed sweetness of the bourbon.
- Sweet Pairing: Ideal with Dark Chocolate Ginger or a Cinnamon Apple Galette.
About the brand
Heaven’s Door, founded by Bob Dylan, creates "The Bootleg Series" as an annual tribute to Dylan’s famous "Bootleg Series" of rare and unreleased recordings. Volume V (released late 2023 and highly active in collector circles through 2026) is one of the most ambitious in the lineup. It features an ultra-rare 18-year-old bourbon finished in Spanish Vermouth Rouge casks. Like previous volumes, the bottle is a handcrafted ceramic decanter featuring a Dylan painting—this year titled "No Vacancies"—housed in a bespoke leather journal.
