Tasting Profile & Food Pairings
Taste Notes
- Nose: Highly aromatic and floral. Top notes of rose, lychee, and rosemary, with a hint of mature woodiness and sandalwood.
- Palate: A silky, honey-like sweetness leads the way. Flavors of candied orange peel, white chocolate, and a subtle hint of apricot.
- Finish: Subtle and long, ending with a delicate trail of Mizunara oak and a touch of black pepper.
Food Pairings & Serving
- Savory Pairing: Pairs excellently with Smoked Salmon or Grilled Steak. The light fruitiness complements the smoke, while the wood tannins cut through the fat of the meat.
- Asian Cuisine: A perfect match for Sushi and Sashimi (especially Uni or Otoroh). It also stands up well to Spicy Asian dishes, where the honeyed sweetness provides a cooling balance.
- Sweet Pairing: Complements Dark Chocolate or a Pear Tart. The white chocolate notes in the whisky harmonize beautifully with creamy or fruit-based desserts.
- The "Neat" Standard: This commemorative edition is best enjoyed neat in a Glencairn glass to appreciate the complex aromatics. For a more refreshing experience, try the "Mizuwari" style—served with a large hand-cut ice cube and a splash of pure spring water.
About the brand
Hibiki (meaning "Resonance" in Japanese) was launched in 1989 to celebrate Suntory's philosophy of living in harmony with people and nature. For the Suntory 100th Anniversary (2023–2026), the House of Suntory released two distinct commemorative versions of their world-famous blend. These editions celebrate the legacy of founder Shinjiro Torii and the mastery of the current Chief Blender, Shinji Fukuyo.
