Tasting Profile & Food Pairings

Taste & Sensory Profile

  • Nose: Deeply aromatic and "old school." You’ll encounter notes of dried apricots, prunes, and orange peel, layered with the signature sandalwood and "forest floor" (earthy mushroom) aromas typical of long-aged Fine Champagne.
  • Palate: Voluptuous and spicy. It offers a dense texture with flavors of hazelnut, gingerbread, and honeyed fruit. There is a distinct cigar box/cedar quality that develops mid-palate.
  • Finish: Exceptionally long and warm. It recedes with a refined toffee and black pepper spice, showing none of the harshness found in younger VSOPs.

Food Pairings

The complexity of an older Napoléon Cognac demands rich, savory, or highly textured foods:

  • Savory: Duck Confit or Foie Gras. The cognac’s acidity and fruit cut through the rich fats, while the sandalwood notes mirror the gamey depth of the meat.
  • Cheese: Old Mimolette or Aged Roquefort. Salty, crystalline cheeses provide a perfect counterpoint to the toffee sweetness of the spirit.
  • Dessert: Dark Chocolate Tart or Tarte Tatin. The caramelized apple notes in the dessert harmonize with the apricot and wood spice of the cognac.
  • The "Meditation" Serve: Best enjoyed neat in a tulip-shaped glass. Hold the bowl of the glass in your hand for a few minutes; the warmth of your palm will release the older, more delicate "rancio" (nutty/earthy) aromas.

About the brand

The "Napoléon" Origin: Courvoisier was the first house to use the "Napoléon" designation. While Napoleon I famously took casks of Courvoisier into exile on St. Helena, it was Napoleon III who granted the house the title of "Official Supplier to the Imperial Court" in 1869.
