The process begins with hand-selected, fully mature agave plants grown in the rich volcanic soil of the Tequila Valley in Jalisco, Mexico. The agave piñas are slowly cooked in traditional stone ovens (hornos) for up to 36 hours, a method that ensures even cooking and optimal conversion of starches to sugars, yielding a deep, sweet agave flavor. Following cooking, the piñas are crushed using a roller mill to extract the sweet juice, which is then fermented using a proprietary yeast strain for several days. This mosto undergoes double distillation in stainless steel pot stills, a process chosen to produce a clean, pure agave spirit. For its "Reposado" (rested) designation, Partida Reposado is then aged for a minimum of six months, exceeding the legal requirement, in re-charred American oak bourbon barrels.
