  • About The Product

This limited-edition single cask bottling from The GlenAllachie was distilled in 2009 and matured for 12 years in a hand-selected Madeira barrique before being bottled in 2021 exclusively for select markets. Drawn from cask #7666 and bottled at a natural cask strength of 60.1% ABV, it is non-chill filtered and of natural color, allowing the whisky to express the full influence of its unique cask maturation.

The use of Madeira wood imparts layers of dried fruit, orange zest, caramelized sugar, and rich spice that intertwine beautifully with GlenAllachie’s signature honeyed Speyside spirit. The result is a whisky of intensity and elegance, offering both vibrancy and depth in equal measure.

As a genuine single cask release, availability is extremely limited, with each bottle individually numbered. It is part of GlenAllachie’s acclaimed program of single cask selections overseen by Master Distiller Billy Walker, who carefully curates unusual and high-quality casks to showcase the distillery’s versatility and craftsmanship.

This release highlights GlenAllachie’s commitment to innovation, flavor exploration, and integrity in production, making it a prized addition for collectors and connoisseurs alike.

    Taste Profile & Food Pairings

    Tasting Notes

On the nose, vibrant waves of orange marmalade, dried apricot, and honey mingle with toasted almonds and warm spice. The palate is bold and layered, opening with rich fruitcake, caramelized brown sugar, and red berries, balanced by dark chocolate, nutmeg, and hints of oak char. The finish is long and warming, leaving behind echoes of sweet citrus, raisin, and subtle espresso.

    Food Pairings

With starters, foie gras or pâté on brioche toast enhances the whisky’s sweet dried fruit character. As a main, duck breast with cherry reduction or roast pork with spiced glaze resonates with its Madeira-driven citrus and spice notes. For cheese, aged Manchego or Comté highlight the nutty and honeyed depth, while blue cheeses like Roquefort add a contrasting salty edge. Dessert pairings shine with dark chocolate mousse or a slice of orange and almond cake, both echoing the whisky’s citrus, nut, and cocoa tones.

    About the Brand
