Tasting Profile & Food Pairings
Colonel E.H. Taylor, Jr. Barrel Proof (2025 Release)
Tasting Notes: A massive nose of dark chocolate-covered cherries and musty oak. The palate is viscous and powerful, bursting with wild blueberry cobbler, salted caramel, and toasted marshmallow, leading to a long finish of tobacco leaf and black pepper.
Yellowstone Hand Picked Collection (Single Barrel)
- Tasting Notes: Profile varies by barrel, but typically features smoked caramel, rye spice, and leathered cherries. The high-proof selections often lean into a "pancake breakfast" vibe with notes of maple syrup and buttered toast.
Buffalo Trace Kentucky Straight Bourbon
- Tasting Notes: A classic harmony of vanilla, mint, and molasses. It’s exceptionally smooth with a palate of brown sugar and toffee, finishing with a clean, spicy tingle of oak.
- Food Pairing: Smoked Duck or Charcuterie. Its sweetness cuts through rich fats, while the minty notes refresh the palate.
